Sometimes you just need a very chunky, chewy, chocolatey biscotti. Or ten chewy chocolatey biscottis. (Let's not split hairs.) These are biscuits that you can be a little rough with, a little lazy with. The recipe is reasonably forgiving, so if you feel like throwing in extra add-ins like dried cherries or dark chocolate, go wild.
If you've been anywhere near me the last few weeks you've probably heard me raving about one of three things: cauliflower pizza OR broccoli flatbread OR cauliflower & cannellini bean mash. I've practically been pontificating from the rooftops about the deliciousness of these vegetable based saviours. They're flavoursome, they've got texture, they don't fall apart in your hands. It's been magical. So here's my contribution to the mix: a thyme & garlic flatbread that totally blew me away.
